Pros
Everything that Roly Poly makes is high quality and made with fresh ingredients. All of the sandwiches are made to very exacting standards and the rules for service are very strict. This is a very friendly, healthy place to work and to eat and is less dangerous than other restaurants because there are no fryers or steamers. The only hot things in the kitchen are a couple small sandwich grills and a soup warmer. Since it is more expensive than 'fast' food, managers are more mindful of customer and employee problems and will go out of their way to provide great service!

The work load for Roly Poly is massive. Several hours of prep each day is normal. Every slice of lunch meat, every single vegetable, and every slice of cheese is cut fresh on the day it is served. Then, the meats are portioned out by weight and arranged on wax paper the way it will go on the tortillas. The chicken and steak come already cut into strips, and these must be portioned out as well, into hundreds of wax paper packets. Every vegetable has to be washed and sliced, then put in refrigerator containers. Hundreds and hundreds of souffle cups must be filled with sauces to serve on the sides of sandwiches, and many of the signature sauces (like basil mayo and horsey sauce) are made fresh each day and then put into squeeze bottles. The tuna salad and chicken salad are also made fresh each day, and with the chicken, that involves chopping pounds of pre-cooked chicken into bite size pieces. There is so much work to do at Roly Poly, and most often you stand in one spot working. This one con of working at Roly Poly is what makes me return to the restaurant as a customer time after time!
