There is some flexibility, but it is a business that needs the staff to be available so the hours of work and lunch breaks need to be structured, scheduled and consistent. - Great for some but not for everyone. Not everyone can handle the initial moments with a stressed customer, to de-escalate and transition to a plan forward.
