Management is extremely unorganized. Little direction or training in bakery department due to owner's scattered personality-- no official par lists, tracking of ingredients. Planning of new products is non-existent and is instead spontaneous and sprung on you. Management is unprofessional and talks about the performance and compensation rate of other department members during 1-on-1's. Owner has little experience in professional food setting and regularly does not follow food safety standards (meat thawing on counter for example).
